lol. tbh, I thought the same thing before I moved here. Don't get me wrong, its not bad, but the expectation level is very high for certain norms. The racism is fairly real down here too.
Portland has a lot of jobs going on and there is a lot of food service and it's easy to get a food handler's card online. Some of the job scene is clique-y and if you can rub elbows and do all that. I lived in Portland and had and left a few jobs and the craigslist is always popping. Portland is a great place to start over; but I would definitely suggest moving there in Spring or Summer and riding into the winter if you're not used to drearyness.
The winter was really my only concern about Portland lol. Is it cheesy that the show Portlandia inspired me to want to move there?
