I don't think small amounts of carbs are harmful, if you eat everything in moderation. And you won't feel so deprived if you allow yourself a little of everything. That's the principle behind Weight Watchers, probably the only successful diet in America. Potatoes are full of vitamins. Plant based diet here, including dairy for.. 2+ decades now. I commonly say I'm vegetarian, however in the past month, have had two people respond with, "If you ever have eaten meat you're not vegetarian".... okay. Plant based diet covers it pretty well. Also, it's a spiritual choice for me, as well as health. At family meals, if the meal is already prepared, yes I'll eat what everyone else is eating perhaps, not to waste the food. I say prayer, thanking the animal that's feeding me, for the sacrifice. I do the same thing with my leather shoes though, and jacket. Being practical, and also true to my own heart. Enchanted Broccoli Forest was my first vegetarian cookbook, 25 years ago, and is a well known vegetarian cookbook. Have made the Challah bread 2x from scratch, from that. It's a hearty recipe - good arm workout (you're kneading bread for a few hours). A few simple things that help me - I eat chia seeds daily (protein, and fiber), and meal prep brown rice, millet (two higher protein grains, with higher fiber). It took about 6 attempts before I figured out how to make brown rice edible. My secret - top on steam after strain, 10 min. Quinoa is the next grain to master (I've botched 3 cooks of it) - diabetics focus a lot of attention on Quinoa, due to the grain's high protein content. Veganism - I have 2 cookbooks on it, yet have never made recipes from them. I aspire to veganism, although I enjoy dairy and eggs in my food daily, like a lot of us. Keep us posted.
